Apple & Cinnamon Breakfast Loaf
A super delicious and moist apple and cinnamon loaf, loaded with pieces of apple in the centre.

Ingredients
- 5oz white sugar
- 5oz cake butter
- 5oz self-raising flour
- 3 beaten eggs
- 1 tbsp vanilla extract (approximately 210g)
- 0oz ground cinnamon
Instructions
Step 1
Preheat the oven at 170°F/340°C.
Step 2
Using the bowl of your Ninja Kitchen food processor along with the dough blade, add the white sugar and butter and select low for approximately 10 seconds to combine both ingredients.
Step 3
Add the vanilla extract, beaten eggs and flour and repeat by selecting low for 10-20 seconds.
Step 4
Add 3/4 of apple pieces with skin in the batter and mix the batter gently with a spoon.
Step 5
Prepare a loaf tin by covering it with greaseproof paper, pour the cake batter in the tin and thinly slice the ¼ of apple into thin slices, place on top of the loaf and place in the oven to bake.
Step 6
Bake for approximately 45-50 minutes.
Step 7
Pierce the cake to make sure it has bake through and allow it to cool before slicing.
