Baked Lemon and Blueberry Doughnuts

- 3oz melted butter
- 3oz white sugar
- 3oz self raising flour
- 2 eggs
- 3oz fresh blueberries
- 1 zest from lemon
- 2oz icing sugar
- 4 tbsp lemon juice
Instructions
Step 1
Begin by preheating your oven at 170C degrees.
Step 2
Using the bowl of your Ninja Kitchen along with the dough blade, add the melted cake butter and white sugar, select low for approximately 10-20 seconds to cream the ingredients together.
Step 3
Add the eggs and the flour and select low again for approximately 15 seconds to combine the dry and wet ingredients together and form a creamy batter.
Step 4
Add the blueberries and lemon zest and fold them in the batter.
Step 5
Add the batter in greased doughnut tins and place in the oven and bake for approximately 12-14 minutes.
Step 6
When the doughnuts have baked, allow them to cool completely before icing them.
Step 7
Mix the icing sugar and lemon sugar and mix together to create a lemon glaze, dip the doughnuts in the glaze and allow the glaze to dry.
