Banana, Walnut & Dark Chocolate Bread

Who doesn’t love banana bread? This banana bread is deliciously rich with added crunch from the nuts and bitterness from the dark chocolate pieces. You can serve the banana bread slices for breakfast with a nut butter of choice (peanut butter goes very well) and some banana slices.

Ingredients

  • 3 medium-sized bananas (approx. 240g)
  • 3.5oz cake butter
  • 4.9oz light brown sugar
  • 1 egg
  • 4.9oz self-raising flour
  • 1.4oz walnut pieces
  • 1.75oz dark chocolate pieces

Instructions

Step 1
In a large mixing bowl, mush the banana into puree, add the butter and light brown sugar and mix to combine the ingredients together and create a paste.

Step 2
Add the 1 beaten egg and mix together, sift the flour over the wet ingredients and mix gently to combine the dry and wet ingredients together.

Step 3
Add the walnut pieces and chocolate pieces (save some to sprinkle on top), gently fold in the cake batter.

Step 4
Set your Ninja Mini Flip oven to bake at 170C degrees (if you are using a regular oven, do make sure you preheat the oven at the beginning), place the banana bread batter in a greased loaf tin and place in the oven to bake for approximately 45 minutes.

Step 5
Pierce to check the banana bread is baked, wait for it to cool slightly and then slice.
