Ingredients
- 3.5oz almond or cashew butter
- 2 eggs
- 1 tsp vanilla extract
- 3.5oz gluten-free flour
- 3.5oz ground almonds
- 3.5oz sweetener
- 1 tsp baking powder
- 2.63oz frozen mixed berries
- 4 meringues, broken up into small pieces
- Melted white chocolate to drizzle
Instructions
Step 1
Preheat the oven to 180C and grease and line a 20cm round tin.
Step 2
Place the nut butter, eggs and vanilla into your Ninja Kitchen Nutri Ninja food processor and whizz up until smooth.
Step 3
Add in the flour, ground almonds, sweetener and baking powder and blend again until combined.
Step 4
Gently stir in the mixed berries and broken up meringue pieces then spoon into the tin and spread out evenly. Bake for 25-30 minutes until firmed up then leave to cool.
Step 5
Pop out of the tin then slice into 8-10 pieces. Drizzle with melted white chocolate, then enjoy!
