Ingredients

  • 1 onion, finely chopped
  • 3 cloves garlic
  • 5 tomatoes, finely chopped
  • 3 peppers, finely chopped
  • ½ tsp ginger powder
  • 1 tsp salt
  • ½ tsp cumin
  • ½ tsp coriander powder
  • 200ml low fat coconut milk
  • Juice of a quarter of a lemon
  • NADA rice

Instructions

Step 1
Cut vegetables into small pieces. Fry the onions and garlic for 3 minutes over high heat. Then add the spices, tomatoes and peppers.

Step 2
Fry again for 5 minutes. Transfer everything into your ninja food processor, blend It and pour it back into the pan. Add Chickpeas, coconut milk, lemon juice and season optional.

Step 3
Serve with rice and enjoy
