Chicken & Couscous in Broth
Delicious succulent chicken served over couscous in broth, what's not to love?! The mix of pressure cooking and crisping leaves the chicken tasting extra yummy, and is made easy in the Ninja Foodi Multi-Cooker.
Ingredients
- 1 chicken leg
- 2 tsp your favourite seasoning (I recommend smoked paprika)
- To taste salt and pepper
- 3 tbsp olive oil
- 17oz chicken broth
- 1 bay leaf
- 2-3 black peppercorns
- 11oz new potatoes
- 1.7oz giant couscous
Instructions
Step 1
Season the chicken with olive oil and the spices of your choice. Leave it on the counter for 1 hour to marinate
Step 2
After the marinating is complete, add the chicken broth, bay leaf, black peppercorns and new potatoes in to the main pot of the Foodi
Step 3
Place the marinated chicken on to the reversible rack, and place it inside the Ninja Foodi Multicooker
Step 4
Assemble the pressure lid and pressure cook on high for 15 minutes
Step 5
Once the pressure cooking is complete, carefully move the vent to the quick release position. Take off the pressure cooking lid, and remove around 3/4 of the chicken broth
Step 6
Now to crisp the chicken and potatoes. Cut the potatoes in half and place them on to the reversible rack alongside the chicken, skin side up
Step 7
Set the Foodi to air crisp for 20 minutes. Then turn the chicken and repeat for a further 15 minutes
Step 8
While this is crisping, cook the couscous in the broth for around 10-12 min
Step 9
Once cooking is complete, serve the chicken on top of the couscous and crispy potatoes, along with the broth
