Creamy Mushroom Soup
A super easy, super creamy and super delicious plant-based mushroom soup. You can use any type of mushrooms for this recipe. You can double up on the recipe ingredients and make extra to last you a few days or freeze.
Ingredients
- 1 tbsp Olive oil
- 16oz Sliced mushrooms
- 6 Crushed garlic cloves
- 1 Medium onion (sliced)
- 7oz Dairy-free milk alternative
- 25oz Vegetable stock
- To taste Salt and pepper
Instructions
Step 1
Add the onion in to the jug of the Ninja Foodi Blender && Soup Maker and select the saute function. Leave to caramelise for 2-3 minutes, then add the crushed garlic and sliced mushrooms and cook until soften – approximately 12 minutes
Step 2
Add the remaining ingredients in to the jug, secure the lid and select smooth soup
Step 3
When the smooth setting has finished, taste and adjust seasoning if needed
Step 4
Top with toasted bread and some cooked mushrooms
