Ingredients

  • 7oz uncooked Chickpeas (soaked for 24 hours)
  • 1/2 Onion diced
  • 4 cloves Garlic
  • 1 tsp ground Cumin
  • 1 tsp ground Coriander
  • Salt
  • 1/2 tsp Cayenne Pepper
  • 1 tsp Black Pepper
  • 1/4 cup Parsley leaves
  • 1/2 cup Coriander leaves and stalks
  • 1 tbsp Olive Oil
  • 1/2 tsp Baking Powder
  • Olive Oil to drizzle over the top

Instructions

Step 1
Drain the Chickpeas and pat dry.

Step 2
Add all the ingredients apart from the baking powder into the food processor, and blitz until blended coarsely.

Step 3
Transfer the mixture to a bowl, cover and leave in the fridge for an hour. Mix in the baking powder.

Step 4
Scoop 1 - 1.5 tablespoons of the mixture into patties with wet or lightly oiled hands.

Step 5
Preheat oven to 200c/Gas mark 6.

Step 6
Drizzle olive oil over the falafel in the tray. Bake 12 minutes, then flip and bake for 10 - 15 more minutes.
