Ingredients
- 3 tbsp Butter
- 1 tbsp Oil
- 2 large Leeks, Sliced
- 1 small Onion, Diced
- 2 Garlic Cloves, finely sliced
- 3 small Potatoes, Peeled and cubed
- 1l Chicken or Vegetable Stock
- 3.5fl. oz Milk
- 5.25fl. oz Double Cream
- Salt and Pepper
Instructions
Step 1
Select Saute function.
Step 2
Once ready, add butter and Oil.
Step 3
Add the Leeks, Onions and Garlic.
Step 4
Saute on low for 3 minutes.
Step 5
Add the Potatoes and saute for a further 6 - 7 minutes. Add a few tablespoons of water if needed.
Step 6
Add the Stock and Milk and put the pressure cooker lid on.
Step 7
Set the vent to seal.
Step 8
Pressure Cook on high for 6 minutes, then do a Quick Release by carefully turning the valve.
Step 9
Drizzle in the Cream, taste and season.
Step 10
Blend the soup, using a hand blender.
