Pineapple & Passion Fruit Popsicle Cocktail
Ingredients
- 1.58fl. oz gin
- 1/2 cup fresh or frozen pineapple
- 0.7fl. oz lime juice
- 0.53fl. oz simple syrup or vanilla syrup
- 1.05fl. oz passion fruit syrup
- passion fruit pulp
Instructions
Step 1
To a blender, add sliced pineapple, passion fruit juice, lime juice, gin and simple syrup. Puree until smooth.
Step 2
Spoon the mixture into the popsicle molds, filling mold 3/4full. Then top up with fresh passion fruit pulp.
Step 3
Freeze for a minimum of 4h or until set.
Step 4
Serve in your favourite glass with some tonic.
