Ingredients

  • 7oz ricotta cheese
  • 2 egg yolks
  • 5 tbsp flour
  • 3/4 cup of Parmesan cheese
  • Salt and pepper

Serving ideas

  • Pesto
  • Browned butter
  • Creamy sauce
  • Creamy spinach
  • Red pepper pesto

Instructions

Step 1
In a cooking pot bring to a boil 1.5h of water with some salt.

Step 2
In a bowl of a food processor with dough attachment, add all the ingredients, pulse for 30 second, until all the ingredients come together.

Step 3
Remove the dough attachment and scrape the dough from the sides of the food processor bowl.

Step 4
Using large spoon, scoop the dough (about half of the soon) and put it on the water. You should have 7-10 dumplings floating in your cooking pot. Cook on medium heat for 5-6 min.

Step 5
Using skimmer spoon, remove the dumplings.

Step 6
Serve hot with your favourite toppings.
